26/11/2007 - Ravioli Pastry


  • 800g of plain flour
  • 350g of semolina
  • 2 egg yolks
  • 1/4 of teaspoon salt
  • Some water


Mix the plain flour, semolina, salt and egg yolks.  Mix with water.  Let it settle for 2 hours.


Flatten pastry and cut using a glass.  Fill with any fillings of your choice.  The most preferred is a mixture of eggs and ricotta.  Close and boil.  Top with a tomato sauce.
