26/11/2007 - Wholemeal Bread


  • 3 cups whole flour
  • 2 cups white flour
  • 4 tablespoons butter
  • 2 tablespoons honey
  • 1 tablespoon sea salt
  • 2 cups warm water
  • 1 tablespoon sugar
  • 2 tablespoons yeast


Combine yeast, sugar and water and leave for 10-15 minutes.  Once yeast proofs, add the 2 cups of white flour and mix.  Then add salt, honey & butter.  Add whole wheat flour until the dough is too hard to stir.  Then placed onto a floured surface and knead for 10 minutes.  Place the dough in an oiled bowl, cover and put in a warm spot & allow to rise until it has doubled in bulk.


After forming rolls, take each piece of dough and dust in your floured hands.  Place on an oiled baking pan.  Glaze rolls after doubling in size.  Glaze with 1 whole beaten egg and 1 tbs of water.  Bake for 20 minutes at 375 deg. Fahrenheit.  Yields about 24 rolls.
