26/11/2007 - Wholemeal Pasta

Ingredients

  • 1/2 cup whole flour
  • 1 cup white flour
  • 1 egg
  • 1 egg white
  • 2 teaspoons olive oil
  • 1/2 teaspoon sea salt
  • 2 tablespoons water

Method

Combine flours and salt, add beaten egg and beaten egg white, water, oil and salt.  Knead for 10 mins and let rest for 20 minutes.  Roll out on floured surface until very thin.  Cut into thin strips.

Suggestion

Bring a large pot of water and 1/2tsp olive oil to a boil.  Add strips and cook until tender, about 6-8 minutes.  Serve with a hearty, full-bodied sauce.
